Chicken with Pineapple Salsa This Chicken with Pineapple Salsa is one of my favorite dishes. It's great in the spring and summer months when pineapples are at their best. I have to admit that I was not always a fan of pineapple. When I lived on the east coast, I did not like them at all. I found them to be sour and blah. I think the only exceptions were pineapple upside down cake that was covered in brown sugar and Hawaiian pizza. Not the healthiest things to eat, but tasty.

I tried them again after moving to the west coast and they were sweet with a little of that tart citrus flavor. What a difference! I was thinking of all the dishes I could make with this flavor. Everyone always told me how good it was, so was eager to try. One of my best friends from back east loves pineapple. I fully plan on making her this dish the next time she comes to visit and share my new recipe ideas with her.

Since discovering a new fondness for west coast pineapples, I've added it to several dishes. I especially love the way it pairs with salty flavors...but that will come in future recipes 😉

Try this Chicken with Pineapple Salsa recipe...it's a great, low calorie dish. The pineapple pairs wonderfully with the red onion, cilantro and your waistline. You can increase or decrease the amount of onion based on your personal preference. It's easy to make and I think you'll love it!

  1. Preheat the oven to 350 degrees. Pour the orange juice into a 13 x 9 glass baking dish. Place the chicken in the dish. Season the chicken with the poultry seasoning and pepper.

  2. Cover with foil and bake for 30-35 minutes.
Pineapple Salsa
  1. While the chicken is cooking, dice the pineapple. Chop and add in the cilantro along with the lime juice and onion. Mix and let sit on the counter while the chicken finishes.
  2. Once the chicken reaches 160 degrees, take it out and let it rest for 5-8 minutes. Serve topped with the pineapple salsa.
