Anyone who knows me is well aware that I love chocolate. It’s something I have daily, in some form or another. I often get what I call “fake chocolate” which simply means not the full fat version. This includes items like skinny cow ice cream, low-fat puddings, 100 calorie snacks...you get the idea. They’re all fine, but sometimes I just want more “real chocolate” flavor.
I’ve tried very hard over the years to create lower-calorie chocolate treats to calm the “real chocolate” cravings. I’ve come up with a bunch, but not many that most people want to invest the time into making. I've made my own protein bars, snack bars, frozen yogurt, fruit dip and a few others. They’re tasty but can take the better part of my Sunday.
A few months ago I started looking at my mug cake options. I came up with a few that tasted good but they require mixing about a dozen ingredients. Honestly, it was kinda annoying. Maybe it’s fine if you’re eating one once in a while, but I wanted something I could add into my dessert rotation.
I had a few requirements: I didn’t want to have to use egg, I didn’t want it over 170 calories, I wanted a higher amount of protein and I wanted it to be ready to eat in under 5 minutes. That’s not asking too much, right?
I started looking at different pre-made mixes to use as a base. I found Miss Jones Baking Mixes, which has real ingredients and the calories weren’t so bad. I decided to go with their Brownie mix. Quick side note, they have a ton of recipes to go with this mix!
After experimenting with all the ingredients, the winning combination came down to only 4 ingredients and a total prep/cook time of 2½ minutes! And just in case you’re wondering, it calms the “real chocolate” cravings nicely 🙂
