These Apple Donuts were inspired by an episode of Food Network’s The Kitchen. Of course theirs were made with peanut butter and Nutella...yum!
They looked really good, so I decided to make a healthier version.
Instead of regular peanut butter, I used my go-to powdered peanut butter, PBFit. They also make a chocolate powdered peanut butter that I used in place of the Nutella.
If you haven’t tried it, there’s no time like the present! I first got PBFit about a year and a half ago to add to my smoothies for the extra protein boost. It was lower in calories and didn’t bother my acid reflux. Now I use it in baking, snacks, sandwiches, and so much more. I highly recommend it.
I will confess that when I was slicing them, I didn’t quite get an even slice every time. But because the apples are so firm, they still hold up. You can get about 4-5 donuts from each apple.

Make sure you cut the apples last so they don’t start to brown. If they’re not going to be eaten right away, you can dip them in some lemon juice to preserve their color. Simply put some lemon juice in the bottom of a bowl and drop the apple slice in, turn it over and remove it. No need to soak them.
After coating each apple with PBFit, I added a few combinations of toppings. You can swap out the toppings for something you may like better. As long as you stay in the healthy fruit zone, the snack will remain healthy.
These Apple Donuts are not only a great snack for us on our weight loss journey, but kids will love them, too! And it makes for a fun project to make their own toppings.
