Easy Baked BBQ Chicken

This just might be the easiest recipe on the planet. It makes a juicy, flavorful chicken that is perfect for busy weeknights. Plus, it only uses a few ingredients. Try it tonight!

When I created this recipe for Easy BBQ Chicken when I was at the beginning of my weight loss journey. Part of that journey includes prepping my meals for the week ahead of time. When I first started, my refrigerator was always packed with ingredients for salad with chicken. But it got to the point where I was tired of chicken. Chicken breast is so lean and a great protein for my lunches, it gave me great energy to get through the workday...now what?

I started thinking of what I could come up with to add variety. Maybe if I had very different flavors each week, that would help...sounds logical, right? I spent a few Sundays experimenting with flavors and marinades. I was really liking what I created. Since I tend to eat by mood, a new challenge presented itself - I need to make three kinds of chicken to have options for each meal.

So how do I make three different chicken varieties each week without giving up a whole weekend day? The answer was to make recipes that were super quick and easy with minimal prep. I wanted to cook all the chicken in the oven at the same time and be done with it.

This recipe for Easy BBQ Chicken is one of those very easy recipes. I paired it with veggies and some fruit (have to be prepared for the sweet craving that follows lunch) and it worked very well to keep me on track!

Instructions
  1. Place the chicken in a baking dish and season with salt and pepper. Cover each piece with your favorite rub, then add a little of the BBQ sauce to the top. Let them sit in baking dish for about 30 minutes.
  2. Cover with foil and bake for 30-35 minutes or until the chicken has reached 162 degrees. Remove from the oven and let it sit for 10 minutes while it rests and finishes cooking.
