One thing I love is experimenting in the kitchen with different flavors and dishes. I happened to stumble upon this Basil Chicken & Sun Dried Tomato Bowl. It started as a garlic chicken dish and, over the years, it evolved into what it is today.

When you're on your weight loss journey, it's important to prepare food that you love so you'll want to eat it. It makes it so much easier to make healthy choices when you know something delicious is waiting for you. Trying new flavors is a great way to discover new dishes.

In this case, what started as garlic chicken soon included a lot more basil instead of a little Italian seasoning. Then came the spinach. And most recently the sun dried tomatoes were added. Each bite is so tasty and will keep you coming back for more.

The addition of spinach gives us a great source of fiber, vitamins A, C, E & K, vitamin B6, folate, calcium, iron, phosphorus, potassium, copper, magnesium and manganese. Essentially, it has nutrients for every part of the body.

The sun dried tomatoes offer us a good amount of vitamin C, vitamin K, iron and lycopene. Plus they contain antioxidants linked to lowering the risk of cancer.

Instructions
  1. In a large saute pan, add the cubed chicken and garlic. Coat with poultry seasoning and start cooking over medium heat.
  2. When it's about 3/4 of the way done, add the chicken broth, tomatoes, spinach and basil. Combine all ingredients and lower the heat to medium low and cover. Cook for about 5-7 minutes and remove from heat.
  3. Add the butter and garlic salt and stir together once the butter is melted. Serve over the brown rice.
