One of Fall’s great in-season vegetables is broccoli, which has some major health benefits. It makes me very excited to share this recipe for Cheesy Chicken and Broccoli Bowl!
It’s pretty easy to make and it’s all done in one pan, so there’s no need to dread the cleanup. Coming in at only 257 or 366 calories with brown rice, you can feel good about this meal all around.
One thing I’m not sure many people know about the recipes I post is that they are based on what I’m craving at the time. I’m definitely someone who determines what to eat by mood. I’m always having to meal prep different options to accommodate all the cravings!

One week I couldn’t get broccoli cheddar soup off my mind. This soup is not even close to what I’d consider a healthy meal. So when I’m at the supermarket, I look around to see what will go best in this dish to make it taste good while keeping the calories down. I’m very happy with the way it came out and I’m no longer thinking about the soup!
This Cheesy Chicken and Broccoli Bowl is the 3rd chicken bowl I’ve posted. I have to say, I’m really liking them. They are easy, filling, and delicious. I love them for lunch and dinner. I can certainly see some breakfast bowls in my future, too. They’re just too convenient to not give it a try!
