Yep, once again I’m bringing you a deliciously garlicky dish. Do you really mind at all that this blog is garlic-happy? I know I’m not the only garlic lover out there! I developed this recipe for Chicken and Green Beans in Garlic Sauce in my quest to make more sauces with Greek yogurt. This dish is straight protein and veggies, so it’s low in fat and low in calories. However, the flavor it packs is awesome! The roasted garlic sauce has a smooth, creamy texture, and paired with savory garlic. A touch of lemon zest really elevates the sauce, strengthening the flavor profile.
I chose to use Greek yogurt for the sauce because it’s a great way to get that creamy effect without using the traditional dairy products that are high in fat (sour cream, heavy cream, etc.). Yogurt gives you a little extra protein, too. Just be sure to get fat free plain Greek yogurt that does not contain any sweeteners.
I chose green beans to go in this dish because, well, I love them. But more importantly, they contain some key nutrients that our bodies need. Green beans are high in vitamin A, C, and K. Plus, they're a great source of folic acid and fiber.
Between the chicken, green beans, garlic and Greek yogurt, this is dish holds significant nutritional values, all of which we could use a bit more of this time of year. See how yogurt and garlic (amongst others foods) can boost your immune system.
