Chicken and Green Beans in Garlic Sauce

  1. In a large saute pan, add the four chicken breasts and season with poultry seasoning. Add the garlic into the pan and the chicken broth. Cover and begin cooking over medium heat.
  2. Stir occasionally to keep the chicken pieces from sticking together. Put the Greek yogurt into a small bowl or cup. Once the chicken is about 3/4 of the way done (around 145 degrees), take a spoonful or two of the liquid in the pan and add to the yogurt. This will help to not shock the yogurt with high temperatures.
  3. Remove the chicken from the heat for a moment and clear a space in the middle of the pan. Add the yogurt mix back in and stir until it blends in and you can't see white of the yogurt.
  4. Return the pan to the burner and turn the heat up. Add the butter and finish cooking until the chicken reaches 162 degrees. Add in the steamed green beans and basil. Mix well and let sit off the heat for 5 minutes and serve.
