I’ve always been a big fan of mushrooms. This week I get to share the recipe for one of my favorite dishes, Chicken and Mushroom Bowl!
I’m pretty excited to share this recipe. I’m kinda surprised that I haven’t already. This is one of my easy, go-to weeknight dinners that is so satisfying and delicious. And did I mention easy??
Everything cooks in one pot except the rice. You are basically chopping up the chicken, onions and garlic and cooking them in a large saute pan with the mushrooms on top. Cover and let it cook, coming back to stir occasionally.
To make it even easier, I used Uncle Ben’s pre-cooked brown rice that’s ready in 90 seconds. Their bags come with 2 cups of cooked rice, which serves 4 people. They make it so easy!Related: How to Read Food Labels
With these types of dishes where I’m putting a great protein and veggie mix over rice, I never feel like I need butter on the rice. The juices from the chicken and mushrooms add that extra layer of flavor.
I used brown cremini mushrooms here but you can use whichever ones you like best. Mushrooms are packed with nutrients, some of which are not available in other vegetables. Read about the health benefits of mushrooms and ideas to cook with them.
I also added some spinach in this dish, which adds a different flavor and texture. Plus, it adds even more nutrients to the dish. In addition to the mushrooms, the extra nutrients from the spinach come in handy in the Fall and Winter months when our immune systems tend to be on overdrive protecting us from all the viruses going around.
