Chicken Cucumber Cups

A couple years ago I was hosting a girls night at my house and wanted to have some good appetizer foods to offer. I found a recipe for chicken cucumber cups that contained a lot of mayo. I'm not a fan of low-fat mayo so I worked with Greek yogurt until it tasted "right."

It was surprisingly pretty good. The taste of plain non-fat Greek Yogurt completely changes when you add salt & pepper, especially when you add any other seasonings. I've actually used yogurt in place of mayo on a bunch of dishes. And, some people didn't even notice when I served it to them.

This dish has a nice flavor combination. The savory chicken meets the sweet cranberry together with the freshness of the cucumbers. Yum! Plus, the cucumbers make very sturdy little bowls and give it a great pop of color.

After serving the cups to my friends, I continued to make the recipe over and over when I wanted to give myself a fancy-looking treat.

I know that a big part of losing weight is to be prepared everywhere you go. While it's best to serve the cucumber right after cutting it, you could make everything ahead of time and keep the cups and chicken mix separate. Then you'd just have to assemble and enjoy!

Instructions
  1. Season chicken breast with your favorite poultry seasoning and saute with the chicken broth. Once it reaches 165 degrees, shred it using a fork.
  2. In a small bowl, mix the yogurt, onion powder, salt and pepper. Mix in with the shredded chicken. Add the dried cranberries, mix and set aside.
  3. Cut the ends off of the cucumbers. Cut the cucumber into 1 inch pieces. Scoop out the center with a spoon. Put your chicken mixture into the cups and serve!
Recipe Notes

You can prepare the chicken mixture the night before, but make sure you cut the cucumber right before serving.
