Chicken with Fresh Mozzarella & Roasted Tomatoes

This recipe for Chicken with Fresh Mozzarella & Roasted Tomatoes is inspired by Caprese Salads, which I LOVE. Fresh mozzarella - tomatoes - basil ... how can you go wrong? It's refreshing, filling and oh-so-satisfying!

A few years ago I had the privilege of going to Prague with the company I was working for at the time. Me and a co-worker decided to grab some lunch before exploring and walked  through an area with many restaurants with outdoor seating. Each one had their menus posted outside and I came across a Caprese Salad Sandwich. I decided immediately that was what I wanted. It was amazing! It was then that I decided I needed to come up with my own variation.

When I started to experiment with the flavors, I went with roasted cherry tomatoes because of the flavor they achieve after roasting. I wanted them to flow well with the hot chicken and cheese. In my opinion, the freshness of the mozzarella can make or break the meal. I was sure to get mozzarella that was very soft and still had a fair amount of moisture. I personally like mozzarella that has a lot of liquid. But I know that's not everyone's preference.

Since basil is not in season, I went with a new option that I found at the supermarket. It's lightly dried basil (other herbs available, too) that's not quite fresh but far from dried. I'm loving it!

I thought about serving this with pasta but that just adds on calories. Zoodles would work well here, but to be honest, one portion of the chicken and some salad really filled me up. So it's your call whether to add them or not. It won't add many calories and since zoodles have so much water, they'll fill you up rather quickly.

Lastly, if you don't like cherry tomatoes, you can roast any tomato then slice it up to add to the top of the chicken. Whichever one you choose, I really hope you enjoy this recipe for Chicken with Fresh Mozzarella & Roasted Tomatoes as much as I do!

  1. Preheat the oven to 400 degrees. In a large saute pan, add the four chicken breasts and season with poultry seasoning. Add the garlic into the pan and the chicken broth. Cover and begin cooking over medium heat.
  2. Spread the cherry tomatoes out on a sheet pan and coat with the olive oil. Season with salt and pepper. Roast in the oven for 15 -18 minutes. When they come out, sprinkle with a little more salt and 1/2 tsp basil.

  3. Once the chicken is just about done or has reached about 158 degrees, add a slice of cheese to the top of each piece and bake for 2-3 minutes to melt the cheese. If your saute pan can't go right into the oven, you can raise the heat and cover to melt the cheese, too.

  4. Sprinkle the basil onto the chicken and top with the roasted tomatoes.
