Chicken with Fresh Mozzarella & Roasted Tomatoes

  1. Preheat the oven to 400 degrees. In a large saute pan, add the four chicken breasts and season with poultry seasoning. Add the garlic into the pan and the chicken broth. Cover and begin cooking over medium heat.
  2. Spread the cherry tomatoes out on a sheet pan and coat with the olive oil. Season with salt and pepper. Roast in the oven for 15 -18 minutes. When they come out, sprinkle with a little more salt and 1/2 tsp basil.
  3. Once the chicken is just about done or has reached about 158 degrees, add a slice of cheese to the top of each piece and bake for 2-3 minutes to melt the cheese. If your saute pan can't go right into the oven, you can raise the heat and cover to melt the cheese, too.
  4. Sprinkle the basil onto the chicken and top with the roasted tomatoes.
