Chicken Lettuce Wraps

Back when I lived in New York, there was a restaurant I liked going to called Double O grill. They are the reason I started eating Chicken Lettuce Wraps. When I originally tried to make theirs at home, I wasn’t so worried about making it healthier. There was quite a bit of flour and butter.

Things have changed a bit since then. To be honest, I think I like the healthier version even better! It has a great mix of ground chicken, vegetables and, of course, a great garlic flavor. Pair it with the cool, crunch of the lettuce and it hits all notes!

I can't sit here and claim to be the best person for getting whole sheets of lettuce off the head. However, when I make recipes to share with you, there are a number of people who are a part of the planning and taste testing. I brought up my lettuce sheet peeling skills (or lack thereof) and got some great tips from my recipe team.

What you do is take the head of lettuce with the core facing down and firmly hit it on a hard surface, like your kitchen counter. It will knock the core loose so you can easily remove it. At the bottom of the head, the sheets should now be mostly unattached. Start peeling from the bottom to keep the sheets in tact.

This Chicken Lettuce Wraps recipe is a great, low calorie meal that is also fun to eat. You may find that you fill up quicker with this meal since the food has a chance to make it's way down to your stomach while you're putting together your next wrap.

  1. In a large saute pan, add the ground chicken and season with poultry seasoning. Break up and move to outer circle of the pan, leaving an open circle in the middle.
  2. In the open circle, add the oil, onions and garlic. Start browning the chicken and cooking the onions and garlic over medium heat.
  3. Once the chicken is about half way cooked, add the chicken broth and mushrooms. After about 8 minutes, add the spinach and butter.
  4. Cook for another 5 minutes and add the mixed veggies and garlic powder. Add salt and pepper to taste. Stir well, cover and remove from the heat to allow the liquid to thicken a little.
  5. Get the head of lettuce and prepare sheets, about 4-5 per person. Serve with the chicken mix and lettuce sheets separately and build before eating.
