Chicken with Pear Sauce

Just in time for the Fall season is my Chicken with Pear Sauce recipe. The sweet of the pears mixed with the savory of the chicken really makes a tasty flavor combination. And with pears in season, it’s the perfect time of year to try it!

One of the great ways that having a food blog has changed my life is that I’m far more in tune with what produce is in season. I’ve always gravitated towards the foods I like from each season, but never really looked at all the others as inspiration for new dishes. I have to say, it’s had a very positive impact in my meal prep and in developing dishes for you to try. I’m dedicated to delivering recipes for you that are not only healthy, but delicious, too.

My theory for this recipe was if the sweetness of apples go with chicken so well then pears should, too. And my theory was correct! The chicken and pears compliment each other well, especially when the chicken juices are used to make the sauce (which is done in most of the recipes here).

When foods are in season, you’re getting the best version of them possible. For example, I LOVE blueberries. They are amazing when they’re in season. When they’re not...eh...I don’t want anything to do with the bitter little guys.

Instructions
  1. In a medium pan, add the chicken breast and season with poultry seasoning. Cook over medium heat, adding up to 3/4 cup of chicken broth if the pan gets too dry. Once they are almost done at 163 degrees, remove them from the pan.
  2. Add 1/2 cup of chicken broth to the pan, still over heat. Use a spoon to stir up all the brown bits. Add the onions and pepper. Let cook for 5 minutes and add the pears and butter. Let cook for another 3 minutes and return the chicken. Let cook for two more minutes and serve with parsley sprinkled on top.
