Believe it or not, this recipe for Chicken & Potatoes in Garlic Rosemary Sauce was inspired by some dried rosemary spice that I ordered from Spices for Less. I had ordered a few different spices and got a couple that I didn’t cook with often so I could broaden my seasonings.
I think it’s important to cook with new flavors on a regular basis...especially if I want to keep making new recipes to share with you! It especially helps with my weight loss journey so I don’t get bored eating insane amounts of chicken.
So the packet of rosemary seasoning was sitting there for a few weeks while I searched my brain for some experiment ideas. If you haven’t noticed, I love garlic...it’s in almost all of my dishes. I wondered how I could incorporate it with garlic and if it would work well together.
My first experiment was seasoning the chicken with the garlic and rosemary and baking it. My boyfriend, a.k.a. recipe guinea pig (tough job, I know), tried it out. We agreed that the flavor was good, but the texture was kinda off because of how dry and sharp the rosemary was.
The second experiment was much better. I decided to make a sauce out of the garlic and rosemary. I don’t know if it’s because we are approaching the fall season, but I felt like this should be a comfort food dish.
I had been wanting to try making some sauces with Greek yogurt so I decided to give it a shot. One of my concerns was the yogurt curdling when it hit the hot pan. I made sure to remove the pan from the heat, then added the yogurt. I whisked it in completely before returning it to the burner. I have to say, it all came out really good!
The dish definitely fits under the comfort food category. I hope you enjoy it!
