Cinnamon Sunflower Seed Bites

These little Cinnamon Sunflower Seed Bites are great for when you're on the go and need a quick pick-me-up. The sweetness from the honey and crunch from the toasted seeds and nuts make a delicious combination.

Just a couple of these little bites will calm your hunger while giving your body a decent dose of vitamin E, phytosterols, and magnesium, just to name a few.

Vitamin E is a great antioxidant that helps to neutralize free radicals and protect our cells. It has anti-inflammatory properties as well as cardiovascular disease prevention properties.

Phytosterols have been known to decrease cholesterol in the blood and enhance your immune response.

Magnesium has been linked to reducing the risk of stroke and heart attack, lowering high blood pressure and event preventing migraines. It counterbalances calcium and blocks it's entry to the nerve cell, which keeps our nerves relaxed. When you are deficient in magnesium, nerves can be overactive.

I'd say it's a pretty healthy snack. Even kids will love them!

One of the things I always try to do is get local honey. It helps me so much during allergy season. When I lived in New York, I really didn't have any allergies. Once I moved to California, I was suffering.

A friend of mine mentioned that local honey can help with that because it has the "new" pollen and plant strains that I'm reacting to. On my next visit to the farmer's market, I talked to one of the local honey vendors and he was able to give me specific instructions for my allergies. I'm at the end of my 3rd allergy season out here and what a difference! I am almost to the point that I don't even need allergy medication.

It's amazing what eating the right foods can do for you!

Instructions
  1. Preheat oven to 350 degrees. Line a sheet pan with parchment paper. Mix all the ingredients together in a small bowl.
  2. Now for the sticky part. Make 15 little piles of the mixture onto your parchment paper. I used the teaspoon measuring spoon and it makes a good sized bite.

  3. Bake for 5 minutes. Let them cool completely before removing them from the parchment paper.
