Cucumber & Tomato Salad

This is one of my all-time favorite summer salads. All the ingredients are so fresh and make a wonderful salad with the garlicky vinaigrette. This cucumber & tomato salad makes eating healthy taste so good!

When I was living in New York, I couldn't wait until summer to get tasty veggies. The produce that came in the short summer months was amazing compared to what was available in the winter and spring. My grandmother always made a cucumber and tomato salad for each holiday, cookout or Tuesday, upon request.

Cucumber & Tomato SaladOver the years I developed my own version of the salad that included more garlic, fresh mozzarella (two of my favorites) and balsamic vinegar instead of apple cider vinegar. This was my go-to salad for cookouts and entertaining. When I moved out to California a couple years ago I discovered a whole new level of tasty produce. When I first started making it for friends it was strange to them to not have any lettuce in the dish. I had honestly never really thought of that...nor do I feel like I'm missing lettuce in the salad. Maybe I'll start a trend here in Northern California 🙂

  1. Cut the cucumber, tomato and mozzarella into the bite-sized pieces you prefer and put them into a large bowl. In a separate bowl or cup, mix the balsamic vinegar, garlic, salt, pepper, onion powder and Italian seasoning together. Slowly add the olive oil while stirring. Pour into salad bowl and toss all ingredients together.
