With all due respect to the other recipes on my site, I think this one is my favorite! Who can resist Homemade Apple Cinnamon Oatmeal in the cute little apple cups?!

This recipe just screams fall for me. It’s so hearty, comforting and the perfect breakfast on a chilly morning. It’s hands down the BEST oatmeal I’ve ever made.

It has oats, apples, cinnamon, brown sugar and almond milk. That’s it. Nutritious, delicious and baked in an edible cup!

A few notes about hollowing out the apples...it’s really easy to make a hole on the bottom since the true bottom of the apple is higher than the “feet.” Right after you see the seeds, the bottom is coming. It might be worth grabbing an extra apple just in case.

I also used almond milk because I like a creamier oatmeal. But if you want to save a few calories, you can use water. And if you like walnuts, they would be a great addition to the oatmeal, as well.

This recipe is super easy. I personally love this on Sunday mornings when I’m taking a little time for myself. It give me good energy to get my day started.

This Homemade Apple Cinnamon Oatmeal is also a great way to get kids excited to eat healthy foods. They just love the apple cups!

Instructions
  1. Preheat oven to 375 degrees. In a medium bowl, combine the oatmeal, brown sugar, 2 tsp. of cinnamon and the almond milk. Set aside.
  2. Cut the tops off the apples and use a spoon or melon baller to remove the inside of the apple to make a cup.

  3. Sprinkle 1 tsp. of cinnamon into the bottom of each cup, put in a baking dish and set aside.

  4. Cut up the apple that you scooped out into little pieces. Add it to the oatmeal mixture and mix well.

  5. Scoop the oatmeal filling into each apple. Sprinkle 1 tsp. of cinnamon on top of each one.

  6. Add the apple juice or water into the bottom of the baking dish. Bake for 20 minutes.
