Low-Fat Pesto

Sharing is Tasty ~

One of my boyfriend Kyle's favorite foods is pesto. Naturally, I love that he loves my cooking, so I needed to figure out how we could both enjoy it while I stick to my weight loss journey. My low-fat pesto was born!

The traditional version is on the high-fat side, so I had to make some adjustments. So I cut back the amount of oil, swapped out the pine nuts with walnuts and left out the cheese.

To test my theory, I made us a meal pesto chicken and pasta meal but didn't tell him what I did. And he loved it!

  1. Combine the basil, garlic, 1/2 tbsp of oil, 1 tbsp of broth and walnuts into a food processor. Once combined into a chunky paste, transfer to a small saucepan. Add the remaining oil and broth and cook on low for 10 minutes.
Recipe Notes

If you are using the pesto as pasta sauce, add small amounts of chicken broth to thin it out until you reach your desired consistency.
