One-Pan Garlic Herb Chicken

This is easily one of the most requested dinners in my circle of loved ones. It's so simple and yet so flavorful. This Garlic Herb Chicken is made in 30 minutes and can pair well with most any side dish.

I know I've created something really good when my boyfriend Kyle is asking if there's more in the kitchen after the first couple bites! In addition to some pretty tasty chicken, you also get a nice gravy with it, made from the chicken juices, broth and just a little butter.

One of the tricks I've used to make sure my chicken is always cooked just right is a Digital Instant Read Meat Thermometer. I have two different kinds. One is a little "pocket" thermometer that you can use on the stove top or the grill. I really like this one for when I need a portable option. You simply insert it into the center of the meat on an angle and in seconds you get the core temperature.

The other is an ThermoPro Large LCD Digital Meat Thermometer made for food cooking in the oven. It has a wire that goes from the meat to the little digital screen. It allows you to set an alarm when the food hits a certain temperature. For example, if I'm baking chicken, I can set the alarm to go off at 160 degrees. This way I can remove the chicken from the oven and allow it to cook the remaining 5 degrees while it rests.

People will be asking how you get your chicken to be so juicy! Who doesn't love that feeling? It's up to you whether you tell them about your secret weapon.

Instructions
  1. Add the chicken breast to a large saute pan. Season with poultry seasoning. Add in the garlic and and half a cup of chicken broth. Start cooking over medium heat.
  2. After 15 minutes, flip the pieces. Cover and let cook for another 10 minutes or until the chicken reaches 162 degrees.
  3. Remove the chicken from the pan. It will finish cooking while it rests. Add remaining chicken broth, Italian seasoning and butter to the pan. Bring stir well to combine all ingredients. It should have a gravy-like consistency.
  4. Add the chicken back in and coat with them with the gravy. Serve and enjoy!
