When people think of pumpkin, many of them think of pumpkin pie. While delicious, it isn't really the healthiest use of pumpkin. It has some pretty decent health benefits, which include a good amount of antioxidants, vitamin C, vitamin E and beta-carotene, which are known to help with eye health. It can help balance your glucose levels, which can help with diabetes. When it comes to the pumpkin you use, you have a couple options. You can get pureed pumpkin in a can, or get it from an actual pumpkin. If you opt for the latter, get the baking pumpkins. They are not the ones we get for carving as they can be stringy. They're often called sugar pumpkins or pie pumpkins. Look for ones that are around 5-7 pounds that are free of blemishes.
Cut the pumpkin in half, remove the seeds and bake. Then you can puree it. The seeds also hold some nutritional benefits so roast them and make a snack.
