Protein Strawberry Cheesecake

After a long testing period, I've finally made a tasty Protein Strawberry Cheesecake! It's moist, delicious and each slice is only 187 calories!

Growing up in New York, we had some of the best cheesecake places. My favorite is Junior's. They began in Brooklyn and have opened locations throughout New York City and surrounding areas. Their cheesecake is amazing! And because of that, my standards are a little high.

I can't claim this tastes like Junior's but it's really good and 1/4 of the calories. I used plain non-fat Greek yogurt with low-fat cream cheese. I added just a tablespoon of honey to sweeten but the strawberries and protein powder help add a little sweet, too.

 

You don't have to use strawberries if you don't like them. Swap it out for another fruit. Just remember, the more liquid in the fruit, the longer it may take to bake. So watch it closely at the end.

The Holidays can be tough when you're on a weight loss journey. That's why I wanted to get this recipe done as soon as I could. The testing process was longer than most recipes I experiment with. Most of the time I will try the recipes over a couple weekends and it's good. This one took a couple months. I wanted the consistency to be just right.

  1. Preheat the oven to 325 degrees. Spray a 9" spring form pan with non-stick cooking spray. Be sure all ingredients are at room temperature before you begin.
  2. Using a mixer (and held or counter top) beat together the cream cheese, Greek yogurt, vanilla extract and honey until it's light and fluffy. Add each egg in one by one until they are mixed well. Be sure to scrape the sides of the mixing bowl to make sure everything is blended well.
  3. Fold in the 5 sliced strawberries. Pour the batter into the pan and place into the oven. Cook at 325 for 40 minutes then lower the heat to 200 degrees and cook for another 90 minutes.
  4. Once the cheesecake is golden brown around the edge and a toothpick comes out clean, remove and let rest for 15 minutes. Add the strawberries around the cake and one in the center. Be sure each of the 8 slices has a berry.
