After a long testing period, I've finally made a tasty Protein Strawberry Cheesecake! It's moist, delicious and each slice is only 187 calories!
Growing up in New York, we had some of the best cheesecake places. My favorite is Junior's. They began in Brooklyn and have opened locations throughout New York City and surrounding areas. Their cheesecake is amazing! And because of that, my standards are a little high.
I can't claim this tastes like Junior's but it's really good and 1/4 of the calories. I used plain non-fat Greek yogurt with low-fat cream cheese. I added just a tablespoon of honey to sweeten but the strawberries and protein powder help add a little sweet, too.
You don't have to use strawberries if you don't like them. Swap it out for another fruit. Just remember, the more liquid in the fruit, the longer it may take to bake. So watch it closely at the end.
The Holidays can be tough when you're on a weight loss journey. That's why I wanted to get this recipe done as soon as I could. The testing process was longer than most recipes I experiment with. Most of the time I will try the recipes over a couple weekends and it's good. This one took a couple months.
