  1. Preheat the oven to 325 degrees. Spray a 9" spring form pan with non-stick cooking spray. Be sure all ingredients are at room temperature before you begin.
  2. Using a mixer (and held or counter top) beat together the cream cheese, Greek yogurt, vanilla extract and honey until it's light and fluffy. Add each egg in one by one until they are mixed well. Be sure to scrape the sides of the mixing bowl to make sure everything is blended well.
  3. Fold in the 5 sliced strawberries. Pour the batter into the pan and place into the oven. Cook at 325 for 40 minutes then lower the heat to 200 degrees and cook for another 90 minutes.
  4. Once the cheesecake is golden brown around the edge and a toothpick comes out clean, remove and let rest for 15 minutes. Add the strawberries around the cake and one in the center. Be sure each of the 8 slices has a berry.
