Having variety in our meals is important when trying to make healthy choices on a weight loss journey. You want to crave the food that’s good for you. This recipe for Roasted Lemon Garlic Asparagus is certainly craveable!

We all know that having vegetables in our diet is a good way to get our nutrients. However, there are many veggies out there that people dislike. Asparagus is one of them. I’ll admit, I’m not a fan of the thicker asparagus, I prefer the thinner ones. The flavors here really complimentary.

Every few years our bodies go through changes which can affect your taste in foods. For years I did not like asparagus or brussel sprouts. But I always make sure I try foods I dislike  every couple years when the moment presents itself. For example, I was recently at a friend’s house for dinner and she served brussel sprouts. I put some on my plate and tried them again. I didn’t hate them. There may be some room there to make them into something I eat more regularly.

For starters, roasted veggies are awesome! The natural flavors are enhanced and simple seasonings really go a long way. The garlic and lemon combination make the asparagus shine! I know, I know, I put garlic on just about everything, but lemon isn’t as versatile. At least not in my opinion. But here, it’s pretty tasty.

Instructions
  1. Preheat the oven to 350 degrees. In a small bowl, mix the oil, lemon juice and garlic together. Set aside.
  2. Spread the asparagus onto a medium sheet pan. Trim any pieces so they all fit on the pan without hanging over. Spread the lemon garlic oil around on all the pieces.
  3. Bake for 10-12 minutes to your liking. Enjoy
