I have to be honest, I never would have thought to put these two veggies together in one dish. But Roasted Sweet Potatoes & Mushrooms are kinda awesome!
I saw this done in a local restaurant. They added some kind of sweetener, which I thought was okay. I was more surprised at how well the two veggies blended together. The sweet and savory flavor profile was great!
So I did my own version of them and added some balsamic vinegar. I didn't like it. I was going back and forth in my mind trying to decide what else I could add in to make it pop. I soon discovered that all I needed to do was go back to basics and just roast them together with salt, pepper and a oil.
It was sooooo good! Everyone who had it that night loved it.
Making this recipe has me thinking about other foods that may compliment each other that I haven't tried or thought to put together. I promise to keep experimenting and share the results.
