Roasted Sweet Potatoes & Mushrooms

I have to be honest, I never would have thought to put these two veggies together in one dish. But Roasted Sweet Potatoes & Mushrooms are kinda awesome!

I saw this done in a local restaurant. They added some kind of sweetener, which I thought was okay. I was more surprised at how well the two veggies blended together. The sweet and savory flavor profile was great!

So I did my own version of them and added some balsamic vinegar. I didn't like it. I was going back and forth in my mind trying to decide what else I could add in to make it pop. I soon discovered that all I needed to do was go back to basics and just roast them together with salt, pepper and a oil.

It was sooooo good! Everyone who had it that night loved it.

Making this recipe has me thinking about other foods that may compliment each other that I haven't tried or thought to put together. I promise to keep experimenting and share the results.

Instructions
  1. Preheat your oven to 350 degrees. On a large baking sheet, spread the sweet potatoes out so there's room in between them. Drizzle them with one tablespoon of the oil.
  2. Bake for 10 minutes and pull the tray out of the oven. Add the mushrooms and drizzle with the rest of the oil. Season with salt and pepper.
  3. Let the veggies bake for another 15 minutes, then stir them up. Bake for an additional 10 minutes or until the desired doneness is met. Let rest for a few minutes before moving them to a serving dish.
