I'm glad you stopped by to check out this recipe for Slow Cooker Pulled BBQ Chicken! It's easy, delicious and great when you're looking for comfort food. This dish is a great example of why I have learned to love healthy foods.

I went with Sweet Baby Ray's BBQ Sauce for two reasons: one, it's flippin' good! And two, it's a great sauce that works with most everyone's taste in BBQ sauce. But of course you can swap it out for one of your favorites. Just keep an eye on the calories.

I really like the way this came out. I can't say the same for the first batch. I wanted to be able to throw all the ingredients in to the slow cooker before work and come home to something wonderful. That was not the case. As it turns out, between my commute and full day at work, the chicken cooked way too long and was not the best texture.

So I tried it a couple more times at different cook times and found the sweet spot! The chicken was cooked right and the fresh pineapple pieces just pushed it over the top.

While this recipe is one of the higher calorie dishes on my blog, there's still room to add a small wheat roll or wrap and still be within a good calorie count for dinner. It's a great alternative to pulled pork, which is usually higher in calories as there's more fat.

One of the biggest things to remember on your weight loss journey is that you will stick to eating healthier foods if you like them. And there are so many flavorful and delicious dishes out there (this site included) that it would be difficult to not be able to find a few recipes that you enjoy.

  1. In a large slow cooker, add the chicken breasts along the bottom. Cover with the BBQ sauce then add the garlic on top. Set on high for 4 hours and let it cook uninterrupted.
  2. After 4 hours the chicken will literally fall apart. Using 2 large forks, pull the chicken breasts in opposite directions until it all looks shredded.

  3. After it's pulled, add in the pineapple and basil. Serve by itself, in a wrap or on a whole wheat bun.
