It’s the perfect time of year to dive into some seasonal produce. And what better way than with these Smashed Honey Basil Sweet Potatoes! They’re filled with nutrients and low in calories.
How can you go wrong?
Sweet potatoes pair well with many kinds of proteins. They’re especially great on Thanksgiving. They offer a variety of health benefits, which you can learn about from one of my recent ingredient spotlights, How Sweet it Is to Have Sweet Potatoes. Sometimes those benefits are a bit negated when we add other ingredients. For example, I used to top a large baking dish full of sweet potatoes with mini marshmallows and bake it to get a sweet, caramelized effect. Tasty, but overly sweet and not so healthy.
When I started eating healthier, I experimented with ingredients to try and get something similar. Initially I used brown sugar (but probably too much) to get that sweetness.
These days, I’m not looking for dishes that are too sweet. So I only added a little honey in. But if you like them on the sweeter side, an extra tablespoon of honey won’t be the end of the world. Be sure to stick to one serving, which should be plenty as it’s about a whole sweet potato.
I’ve paired this side with poultry and some fishes and it seems to compliment them nicely. However, since potatoes can be pretty heavy in general, consider pairing with lighter meats and veggies.
