When I decided to eat healthier meals, I started looking at recipe ideas that included lean proteins. My seafood allergy really puts a limit on what I can have. I soon realized that meant eating quite a bit of chicken.
So over the years, I've experimented with hundreds of dishes, at least half of them starring chicken. The one thing I did not want was to get bored of it. Having all of these recipes allows me to still eat by mood.
For example, when I do my meal prep each week, I make sure that I have a few different flavors to choose from at lunch and dinner. I might make some BBQ Chicken or Agave Garlic Chicken or one of the countless other dishes that keeps me on track.
When it comes to teriyaki sauce, I always say to use your favorite as everyone has their own taste. However, with this dish, I would try to use a thicker sauce. It coats the chicken and vegetables better than the thinner ones. And of course, always opt for low sodium. I feel I should note that if you use the same one I did which is Panda Express' Mandarin Teriyaki Sauce, it's 70 calories for two tablespoons.
One of the things I love about publishing these recipes for you is that I get to also share them with my boyfriend, Kyle. It can be tough to be on a weight loss journey when the people you spend a good amount of time with are not. However, I get to eat flavorful, healthy meals with him and don't have to make separate food. When I tell him how low the calories are, he's always surprised.
