Growing up, there were certain dishes that appeared at each gathering. Sausage & peppers was one of them. It was almost always at summer cookouts, graduation parties, or random Thursdays. It's certainly one of the dishes I miss. So I decided to make a healthier version: Turkey Sausage & Peppers.

I have to say, one of the things I love most about this blog is being able to revisit my childhood foods. Every time I write about it, I'm brought back to the happy memories around the dinner table. While all of that food may not have been the most healthy, it was made with so much love.

These days I try to carry on that feeling of love people get when they eat your food. I remember my grandmother would get all the food on the table and watch us start to fill out plates. We'd say grace then dive right in. The room would go quiet (because everyone stops talking and starts eating) and she would smile looking at the happy faces around the table.

As a kid, I never really understood why she didn't dig in when we did. It was amazing, what was she waiting for? But as I got older and started making meals for the people I love, it was very clear. She wanted to be sure we were all happy.

While I love the look of happiness on someone's face when they eat my food, I'm determined to make sure it's healthier. Some of the areas I was able to cut calories in are the use of turkey sausage instead of pork. Additionally, I used a Flatout ProteinUP Flatbread instead of a roll. I really like these. They offer a very nice protein/carb balance and are relatively low in calories.

We all know that sausage tends to be on the fattier side, but even with the flatbread this recipe comes in under 400 calories. How can you go wrong?

While it may not bring you back to your childhood like it does for me, I promise it will be tasty! With my Italian roots, I'm sure you'd expect the Italian version of sausage & peppers, which includes a red sauce. While I do like both versions, this one was less in calories and easier to make.

Instructions
  1. For each of the 5 sausage links, remove the casing by putting the back side of the knife in the center of the link and push down. The meat will start to come out of each end. Squeeze the meat out and cut into smaller pieces. Add them to a large saute pan.

  2. Add the peppers and onions on top and cook over medium heat, covered.

  3. After 15 minutes, uncover and stir. Cook uncovered for another 8-12 minutes or until the sausage is fully cooked and peppers are soft. Serve wrapped up in flatbread and enjoy!
