Winter Salad with Basil Vinaigrette

I recently found myself missing the great salads we had in the summertime. They always have a great variety of ingredients that give you different tastes and textures. Since we're in winter, why not make a salad to that's better suiting? So I present to you this Winter Salad with Basil Vinaigrette.

 

It's always great to utilize our seasonal produce. It gives us the best-tasting fruits and vegetables of the season. I was able to get a few pieces of different fruits and use them in multiple dishes.

When I went shopping, I bought apples, pears and pomegranates and challenged myself to use them in different ways. Some savory dishes have already been posted: Chicken & Apple Wrap, Chicken in Pear Sauce and Pomegranate Chicken.

Now I get to share the sweeter dishes with you!

Using seasonal fruits for salads is always delicious. Plus, they add different textures that enhance each bite. In this salad, we have crisp tart apples; soft, sweet pears; plump, juicy pomegranate seeds; and crunchy walnuts. It's sooo good!

To top it off, you'll be making your own basil vinaigrette. It may seem like it has a lot of ingredients, but it's mostly things you will have in your pantry. Making your own dressing is easy and saves you A LOT of sodium.

I used the lightly dried basil that you can find in most supermarkets so it has a fresh basil flavor. However, using this type of basil makes for a chunkier dressing. If you like thinner dressings, you can go with dried basil. However, you may want to start with less than 2 tbsp. Dried herbs and spices can be a lot stronger.

I also added Greek yogurt to the dressing to not only thicken it, but to also add a little protein. Another great protein for this dish would be grilled chicken. And it would make it a complete meal.

 

This salad is packed with super foods, which means you're getting a ton of nutrients. Basil and apples are two super food MVP's. They contain significant disease-fighting properties. Greens, especially spinach, are very nutritious and help boost your immune system.

Salad
  1. Lay the lettuce in the dish. Cut up the pears and apples in slices or bite-sized chunks (whichever you prefer). Each salad gets half an apple and half a pear. Organize fruits on the plate as desired.
Dressing
  1. Combine all ingredients and mix well. It helps to use a container with a lid so you can shake it. Dress each salad and enjoy!
